Meet Debra: The Magic Behind the Flour

After 34 years jet-setting around the globe in the entertainment and fashion industry, our founder Debra Cooper thought she’d seen it all. Then came 2004 – and a celiac diagnosis that changed everything.

The Plot Twist Nobody Saw Coming

For 12 long years, Debra said “non merci” to bread. Not because she wanted to, but because everything on the market tasted like… well, let’s just say it wasn’t worthy of her memories of real, authentic bread.

Then came 2016. A business trip to Paris. A tiny gluten-free bakery tucked away on a charming street. One bite, and voilΓ  – a light bulb moment that would change lives across Florida (and beyond!).

“THIS,” she thought, “is what I want to create for people like me.”

The Birth of Adieu-Glu

Inspired by that magical Parisian bakery, Debra settled into St. Petersburg and got to work. Adieu means “goodbye” or “farewell” in French – as in “goodbye to gluten, hello to incredible taste!”

She started small, baking gluten-free cupcakes and experimental loaves for friends and neighbors. (Lucky them!) Each recipe was a labor of love, converting traditional favorites into gluten-free masterpieces and nurturing wild sourdough starters that would become her signature.

The Mission Was Clear:

  • Create bread so good, even gluten-eaters would choose it
  • Use only clean, pronounceable ingredients
  • Never compromise on freshness or safety
  • Build a truly “celiac clean” sanctuary
